In 2004, Ilegal’s founder John Rexer began bringing mezcal down from Oaxaca to Antigua, Guatemala, to supply his bar, Café No Sé. At the time, he was getting 30 or so liters of unbranded mezcal from various villages in Oaxaca. The mezcal became popular very quickly. One day, a mezcalero proposed that John buy a pallet or 600 bottles of mezcal. John said, “I have trouble getting 30 bottles across a border. How am I going to get 600?” The mezcalero looked at John, smiled, and said, “No te preocupes, yo tengo un tío,” which means don’t worry about it, I have an uncle. In 2006, John created the brand Ilegal, referring to its history. However, the name has significance on other levels. Many of the palenqueros John worked with in Oaxaca had once lived in the States undocumented, had loved ones living illegally in the States, or dreamed of finding their way to the States in hopes of a better life. This is a dream that Chef Hugo Ortega is very familiar with.
