Mole Tasting Menu

Available for dinner Monday - Saturday

It’s all about the mole! Oaxaca is home to seven classic moles, yet hundreds more are prepared and enjoyed throughout the region. Traditionally, the meat or vegetable served alongside are simply vehicles for the mole itself. 

Below is our Mole Tasting Menu, presented in a progression of courses that build in depth, richness, and intensity.


PRIMERO

Tetela 

blue masa triangular envelope, hoja santa, refritos, quesillo, pumpkin seeds, pipián verde

paired with Casa Pineda Extravagante Mezcal


SEGUNDO

Callo de Hacha

seared scallop, corn cremoso, mole amarillo

paired with Açai What You Did There 

mezcal, bergamont liqueur, cacao liqueur, açai powder, agave, lime


TERCERO

Taco de Pato

compressed confit duck, duck skin chicharrón, mole de tamarindo

paired with 3oz `23 Calera Piot Noir Central Coast, California  


CUARTO

Costilla de Res

braised short rib, mashed potatoes in adobo, mole de chicatana

paired with 3oz `21 Casa Madero Gran Reserva Shiras, Valle de Parras, Mexico


QUINTO

Pastel de Chocolate

flourless chocolate cake with mole negro, coffee-cinnamon ice cream, orange anglaise, caramel-toffee sauce, caramelized cocoa nibs, chocolate soil, mole negro gel
